Possessing unspoiled “woodland glades” and “salubrious air,” the Devon countryside was inviting to city residents. The Devon Inn, built by the Pennsylvania Railroad to take advantage of the area’s hot springs, became a fashionable resort where hotel patrons soon discovered the locally famous horse and carriage trails. Area leaders, supported by the railroad, first created the Devon Horse Show to encourage farmers to breed “more and superior” horses for increasing public demand. – Page 305

Sample Recipes

The over 700 recipes contained within this cookbook were submitted and collected by members of The Saturday Club. The following are just two of the simpler recipes that have proven to last the test of time and are still favorites today.

Curried Chicken Salad
1 (4-pound) chicken, cooked
1/2 cup diced celery
1 tart apple, peeled and diced
3 teaspoons grated onion
1 cup seedless grapes, halved
1/2 cup toasted almonds
3 teaspoons curry powder
1-1/2 cups mayonnaise
1 teaspoon salt
Dash of pepper

Remove chicken from bones; dice. Mix remaining ingredients and combine with chicken. Chill.

Minuteman Macaroons
2-2/3 cups flaked coconut
2/3 cup sweetened condensed milk
1 teaspoon vanilla

Preheat oven to 350 degrees F. Combine ingredients and mix well. Drop from teaspoon 1-inch apart onto well-greased baking sheet or brown paper-covered baking sheets. Bake 8-10 minutes or until lightly browned. Remove from oven and baking sheet at once.
